Recipe of the Day: Green Beans with Caramelized Onions and Bacon


8 slices of bacon, chopped
2 tablespoons olive oil
4 cups sliced onions
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 lb. fresh green beans
2 tablespoons water
1/4 cup cider vinegar


1.  Cook bacon in large skillet over medium heat until crisp. Stir frequently and drain on paper towel.  

2.  Heat oil in same skillet over medium heat.  Cook onions, salt, and pepper covered for 10 minutes stirring occasionally.  Uncover and continue to cook for 5 more minutes until onions are golden brown and tender.

3.  Cook beans in large pot of lightly salted water for 6 to 8 minutes until crisp-tender. Drain and cool under cold running water. Drain well.

4.  Before serving time heat beans onions, and water in large skillet over medium-high heat until heated thoroughly, stir frequently.  Remove from heat and stir in vinegar.

5.  Sprinkle bacon over beans. Serve.
